Ingredients
Gummies made with whole berries
2 cups of organic berries (I prefer blueberry or strawberry since they have less seeds)
1/2 cup coconut water or regular water
1/4 cup lemon juice
2-3 tsp raw honey or maple syrup
1/4 cup of Perfect Supplements Bovine Gelatin (use discount code bewellshel)
Gummies made with fruit juice
2 cups fruit juice (elderberry, tart cherry, orange, etc.)
2 tbsp raw honey or maple syrup
1/4 cup of Perfect Supplements Bovine Gelatin
For immune boosting gummies use 1 cup of elderberry syrup and 1 cup of orange juice then use a frother to mix in colostrum powder (my favorite is Equip Core Colostrum, use discount code bewellshel).
Instructions
Gummies using whole berries
In a high powered blender, add the fruit, lemon juice, sweetener, and coconut water or regular water. Blend a few minutes until completely smooth. If you have lots of seeds or chunks that won't blend and you don't want them in your gummies, you can strain the mixture, but I didn't worry about this! You can taste it and adjust the sweetener as you'd like.
Pour the mixture into a large sauce pan. Sprinkle in the gelatin and let it bloom.
Place the saucepan on the stove and turn heat on low-medium. Gently stir the mixture over the heat until it is a liquid again.
Pour the mixture into a glass storage container or molds.
Let the mixture set at room temperature for an hour, then transfer to the fridge for 30 minutes-an hour before removing from the mold. If using a glass container, cut them into squares before trying to remove them with a spatula. If you go to remove them and they are sticking to the mold, let them stay in the fridge longer! Different fruits can set up differently.
Store in an air-tight container in the fridge for up to 2 weeks. Gummies will soften some (but still hold together) if left out at room temperature – this is how I prefer to eat them, but they are real fruit so store them in the fridge most of the time! I let them sit at room temp for a few minutes and then enjoy!
Gummies using fruit juice (what I usually do)
Pour the mixture into a large sauce pan. Sprinkle in the gelatin and let it bloom.
Place the saucepan on the stove and turn heat on low-medium. Gently stir the mixture over the heat until it is a liquid again.
Pour the mixture into a glass storage container or molds.
Transfer the liquid into your gummy molds or glass storage container. Refrigerate for 1-2 hours until firm (time varies depending on how large your gummies are!). Once firm, remove from the molds and enjoy! Store at room-temp or in the fridge!
Notes
The less gelatin you use, the gummier they will be. If you prefer really gummy gummies, you can coat them in tapioca starch or coconut sugar after removing them from the molds.
If you want more of sour gummies, add lemon juice.
For an immune boost, I use elderberry syrup and orange juice for my liquid. I then add in dissolved bee pollen (1 tsp of pollen dissolved in water).
When you get to the cooling stage, stir in manuka honey. It is important not to add while it is still hot.
